  • 2 lb meat
  • 1 cup white vinegar
  • 1/4 cup soy sauce
  • 1 cup of water
  • 1/4 cup pineapple chunks or pineapple juice
  • 3 bay leaves
  • 1 tsp cracked peppercorns
  • 4 garlic cloves or garlic powder
  • 1/4 cup wine
  • (optional) potatoes
  • (optional) boiled eggs


Let all ingredients marinade for at least an hour, ideally overnight. The following day, bring to a simmer and cook uncovered until done. If you’ve included boiled eggs, take them out of the marinade prior to cooking so that they don’t overcook. Serve over rice.

For a fruity adobo, use Timut pepper and a fruity wine like Ozeki junmai sake.
